Basmati Rice with Corn and Peas

I prefer basmati rice because it’s easy to cook and it tastes awesome too. Winter has come to an end (hopefully). I saw a forecast for snow for sometime next week and almost hit the roof. How is the weather wherever you are? Ours is rain, rain, rain and some more rain, but the temperatures are awesome. I wish you are very pleasant week. Times are busy for me, so infrequent posting, every now and again. 

Basmati Rice with Corn and Peas myfavouritepastime.comHeat oil in a non-stick pan or skillet. Add the rice and cook for about 3 minutes, then add the curry powder and turmeric and continue cooking for another 1 minute.

Basmati Rice with Corn and Peas myfavouritepastime.comAdd the water, season, with salt and pepper and bring to a rolling boil. Cover the pot, reduce the heat, and simmer 12 minutes without lifting the lid. Turn of heat and let stand for another 10 minutes (do not lift the lid).

Basmati Rice with Corn and Peas

Preparation time: 5 minutes; Cooking time: 30 minutes; Serves: 4-6

Ingredients

  • 2-3 tablespoons olive oil
  • 400g (2 cups) Basmati rice
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric
  • 1 cup frozen peas
  • 1 cup frozen corn kernels
  • 750ml (3 cups) water or stock (broth)
  • Salt and freshly ground pepper to taste

Instructions

  1. Wash the rice until the water runs clear, drain and set aside.
  2. Heat oil in a non-stick pan or skillet. Add the rice and cook for about 3 minutes, then add the curry powder and turmeric and continue cooking for another 1 minute.
  3. Add the corn and peas and continue cooking for 2 minutes.
  4. Add  the water, season, with salt and pepper and  bring to a rolling boil. Cover the pot, reduce the heat, and simmer 12 minutes without lifting the lid. Turn of heat and let stand for another 10 minutes (do not lift the lid).
  5. Fluff the rice and serve.

  1. Looks like a fun recipe! Curry powder, yum. Where are you getting snow? We are doing well in Minnesota with 60s this week. Though there’s no guarantee we don’t have another good blizzard in us until we’re safely into summer. Weather is a funny thing.
