I cooked this rice for dinner last night. There were no left overs, so I decided to add it to my repertoire of recipes. You can use ground pork, chicken or turkey. Whichever pleases your palate. You can also invent your own mixture of spices. I wish you a very pleasant weekend.

Points to Note

  1. Carrots in North America are rather hard so they take some time to cook.

  1. This is finishing up cooking as we speak. It smells so good and the spoonful I had before I covered it already tasted great. I can hardly wait to have a plateful.

  3. Just as I was coming out of hibernation, I pulled open the curtains and found snow covered trees! What again?! Anyway, this dish sounds perfect and not too high maintenance 😉

    1. Ha ha sunshine is all I know these days. The thought of snow…again…is enough to make me go crazy. I hope the good weather remains forever. Have a lovely day!!!

  4. Welcome back to the blogging world Liz! And what a nice easy looking recipe! I have some ground chicken and didnt know what to do with it, so out of the freezer it comes! Thank you, always spot on for me with your recipes! So much fun! As I write (type) the snow is falling again! Roofs in my neighbourhood are white! Would you believe, yesterday I was outside doing some pruning and checking plants for winter damage! Grrrrr. I hope your break was restful and not health related. Sending good wishes to you just the same. Have yourself a great week ahead! 🤗

    1. Hi Sandy
Very Belated New Year Greetings. I just needed a break to do and plan for other facets of my life. No health issues.
Can you imagine it’s raining cats and dogs right now? it’s foggy too. Could hardly see the road on my way back this evening. We have had double digit temperatures this week. I was out in a tee-shirt two days ago. The weather is very strange. Is this the result of Global Warming? the nay sayers will emphatically say noooo…
Anyway I want to cook some chicken for dinner. I marinated it four hours ago. A new recipe. I hope I’ll like it.
Have a lovely, snowy weekend. All the snow has melted, here. We are only viewing green grass!
      Liz
