Banana Muffins

Banana Muffins myfavouritepastime.comI have just made these muffins from All RecipesThey had raving reviews but then I realized there were also a number of negative reviews. They were okay and easy to make. The recipe calls for 1½ cups flour but I just used 225g (8oz) flour and baked them for twenty minutes. I would make them again for sure.

Banana Muffins

Preparation time: 10 minutes; Baking time: 20 minutes; Makes 14 medium muffins

Ingredients

  • 225g (8oz) flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 180g (1 scant cup, 6.5oz) sugar
  • 3 large bananas mashed
  • 80g (1/3 cup, 2.8oz) unsalted butter, melted
  • 1 egg
  • Optional: 1 cup chocolate chips

Instructions

  1. Sift or whisk the flour, baking powder and baking soda into a bowl. Make a well into the centre.
  2. In a separate bowl whisk together the sugar, mashed bananas, butter and egg.
  3. Pour the wet ingredients into the well and fold in gently until just mixed.
  4. Optional: Fold in the chocolate chips if using.
  5. Transfer into 14 medium muffin cups and bake at 350ºF (175ºC) for 18-20 minutes.

  1. Banana muffins are a favorite,Liz. Tell me, though, why did you cut the flour by a third? As you may recall, I am not much of a baker and would never vary one iota from a baked good recipe. Pasta dishes, however, are a different story completely … 🙂

    1. I think I added 2-3 tablespoons more than the recipe asked for. Pasta is a favourite of mine but I probably don’t cook it as well as you do! Have a nice week!
