I am sitting around watching Diners, Drive-Ins and Dives with all that glorious food they cook. I can smell and taste everything I see on the screen. If I could eat like that every single day, I would probably add some 50 extra pounds and an extra round middle. How was your week and what are you up to this evening?

Oh boy that chicken Pot Pie looks delicious and those fries are golden and crunchy (still watching… LOL), and dozing a little. I want to share a recipe for my favourite fried meat with lots of spices but you are at liberty to control the amount of hot pepper you add to it. This recipe is simple but extra special. I encourage you to try it. Have a lovely weekend. Mine will be extra busy and fun.

  • Ingredients
  • 600g (1.3Ib) stewing beef, trimmed, cut into cubes and patted dry
  • 2½ teaspoons extra virgin olive oil
  • 1 large onion, finely chopped
  • 1 tablespoon finely grated fresh ginger stem
  • 3 cloves garlic, crushed
  • ½ teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 2 teaspoons ground coriander
  • ½-1 teaspoon dried chilli (pepper) flakes or cayenne pepper
  • 180ml (¾ cup) warm water
  • Salt to taste
  • 1 large tomato, skinned and chopped (1 cup when chopped)
  • 4-5 whole fresh green chillies (optional)
  • ½ teaspoon garam masala
  • 4 tablespoons chopped coriander leaves (cilantro)
  • 2 small tomatoes, sliced, to garnish

Spicy Fried Beef myfavouritepastime.com_4675Heat the oil over medium heat and add the onions, ginger and garlic. Fry until the onions are just soft, about 5 minutes.

Spicy Fried Beef myfavouritepastime.com_4678Lower the heat and add the turmeric, cumin, coriander and chilli flakes or powder.

Spicy Fried Beef myfavouritepastime.com_4684Add the meat, turn the heat to medium and fry for 5 minutes stirring frequently.

Spicy Fried Beef myfavouritepastime.com_4686Cover the pot and cook on medium heat, until all the liquid dries out (15-20 minutes), stirring frequently. Uncover the meat in the last 5 minutes, if there is too much water

Spicy Fried Beef myfavouritepastime.com_4690Turn the heat to high and fry the meat for 2-3 minutes stirring continuously. Reduce heat to medium low and fry for another 7-8 minutes stirring frequently. The meat should now look fairly dry and the fat should be separated from the meat.

Spicy Fried Beef myfavouritepastime.com_4695Add the water and salt, bring to the boil and simmer 50-60 minutes or until the meat is tender. Add more water if necessary. At the end of the cooking time, the thick spice paste should be clinging to the meat.

Spicy Fried Beef myfavouritepastime.com_4715Add the tomatoes and the whole green chillies (if using). Stir and fry over high heat for 3-4 minutes. Stir in garam masala and half the coriander leaves (cilantro) and remove from heat.

Spicy Fried Beef

Preparation time: 30 minutes; Cooking time: 2 hours; Serves: 4

Ingredients

Instructions

  5. Turn the heat to high and fry the meat for 2-3 minutes stirring continuously. Reduce heat to medium low and fry for another 7-8 minutes stirring frequently. The meat should now look fairly dry and the fat should be floating on the surface. You can drain off some fat if you wish, but do not drain off spices.
  6. Add the water and salt, bring to the boil and simmer 50-60 minutes or until the meat is tender. Add more water if necessary. At the end of the cooking time, the thick spice paste should be clinging to the meat.
  7. Add the tomatoes and the whole green chillies. Stir and fry over high heat for 3-4 minutes.
  8. Stir in garam masala and half the coriander leaves (cilantro) and remove from heat.
  9. Serve and sprinkle with remaining coriander (cilantro) and garnish with tomato slices.

    1. Yup – I finished the bread ! It made excellent toast. I also found a great bread recipe from ‘King Arthur Flour’,, which is made in Vermont, just a state away. I’ve visited their shop – fun!! I gave away half a loaf of the bread I made with the new recipe I found – hey, I ‘gotta share the wealth’! ; o )

        1. I’m busy tomorrow but I’m hoping to have the rest of the week to ‘accomplish’ things. I won’t have anyone here until Thursday, meaning the two guys who have doing work on my house. Even the guy who’s been helping me clean out my barn is almost done. (I feel like hanging out a “Do Not Disturb Sign”.) I’m leaving soon for Cancun and there’s so much I want to get done before I go. It certainly seems to me that you get a great deal accomplished in your life. As you already know, I used to get a lot more accomplished… which frustrates me… as you also already know. For some reason the air conditioner didn’t take away ANY of the intense humidity in our room. I had to wash everything I took – even if I hadn’t even worn it.   4. That looks interesting! At first I was thinking oriental, but reading the recipe I see it’s more of an Indian curry style. I love the scent in the house when frying the Indian spices! After eating that kind of food, it sort of awakens your palette doesn’t it? I’m so glad you are giving us these easy to follow recipes! I’ve tried many and haven’t had a bad one yet. I’m in painting mode today….my guest bedroom is being painted. Doing it all in creams and mochas with touches of teal here and there! Still have to buy curtains but think I will wait til the paint and other bits come together! Have a great busy and fun weekend!

      I love creams and mochas, and teal is not bad either. It’s one of my daughter’s favourite colours. I just bought her a teal towel in IKEA the last weekend. I am always looking for more storage space for books and other things. I always watch the Marylyn Dennis show and wish I could give my house a complete make over.     1. You know I bought so many jars of spices and I love to make sure I use them. I tend to keep away from store bought pastes. I love knowing what goes into my food, but hey sometimes I also use those curry pastes especially the Thai one. Have a wonderful weekend!

      I totally agree. I had mine with steamed basmati rice. Ha ha all my babies are grown up now. But I can never forget when the last two were born. They are one year apart and it was a nightmare. I didn’t sleep properly for more than 4 years. Now the youngest is taller than me. He is growing so fast. Have a wonderful day!
