My Favourite Cakes
I love Cheese Cakes but the process of mixing, baking, letting them cool down slowly, in the oven, for several hours can sometimes take up too much time and energy so I decided to look for a no-bake Cheese Cake and found one I used to make several years ago. It’s so easy to make, and tastes fabulous too.
This is not a skinny dessert. The main ingredients are cream cheese, 35% whipping cream, sugar and gelatine. If you’re looking for a rich dessert, this is it, but if you want something more lean, and healthy then just admire the photos and pass.
For the Base
- 150g (1½ cups) Graham crumbs
- 4 tablespoons sugar
- 100g butter melted
For the Cheese Cake
- 10ml (2 teaspoons) gelatin
- 45ml (3 tablespoons) water
- 250g cream cheese
- 60g (¼ cup) sugar
- 2 tablespoons fresh lemon juice
- ⅔ cup cream
- Small can pear halves, drained and sliced
- Fresh fruit to garnish the cake
Brush a 7 inch springform tin (pan) with melted butter or oil. Combine all ingredients for the base and mix well. Press mixture firmly onto base and sides of prepared tin. Refrigerate 20 minutes. Dissolve gelatine as per instructions.
Beat cream cheese with a hand mixer until soft. Add sugar and beat for three minutes, then add lemon juice and beat until blended.
Mix dissolved gelatine with some cream cheese mixture and beat back into it.
Whip cream until soft peaks form.
Fold the whipped cream, gently, into cream cheese mixture.
This is the consistency of the final mixture
Arrange pear slices in the base of crust. Spoon half the mixture onto the pear slices, then top with another layer of pear slices. Spoon remaining mixture on top of pear slices, smoothen the top and chill three hours or overnight.
I put too much crumb on the sides so I had to slice it off (LOL)
The cake was absolutely delicious

Ingredients For the Base

Instructions:
- Brush a 7 inch springform tin (pan) with melted butter or oil. Combine all ingredients for the base and mix well. Press mixture firmly onto base and sides of prepared tin. Refrigerate 20 minutes.
- How to dissolve gelatin: place the 3 tablespoons water in a small heatproof bowl. Sprinkle gelatin, evenly on the water surface and set aside for about 5 minutes until it becomes spongy. Stand the bowl with gelatin in a container with hot water and stir until the gelatin dissolves. Allow to cool slightly then use.
- Beat cream cheese with a hand mixer until soft. Add sugar and beat for three minutes, then add lemon juice and beat until blended. Mix dissolved gelatin with some cream cheese mixture and beat back into it.
- Whip cream until soft peaks form. Fold the whipped cream, gently, into cream cheese mixture.
- Arrange pear slices in the base of crust. Spoon half the mixture onto the pear slices, then top with another layer of pear slices. Spoon remaining mixture on top of pear slices, smoothen the top and chill three hours or overnight. Decorate with fresh fruits. Serve.

Wow, this looks so creamy! I can’t believe it is a no bake cheesecake. It doesn’t bother me at all that it is not low calorie!:) It looks totally worth the calories!
