My Favourite Pancakes
Polenta is a type of porridge or ‘cake’ or ‘bread’ made from yellow or white, coarsely or finely ground cornmeal. The cornmeal was traditionally mixed with water in the ratio of 3 parts water to one part ground cornmeal and then boiled and stirred for a period of about hour until it turned into a thick soft paste. This was served soft or transferred onto a flat plate and left to cool and stiffen like a cake. The ‘cake’ can be sliced and crisp-fried, grilled or baked in the oven. Polenta can be served with savoury or sweet dishes.
Today there is quick-cook polenta that can be cooked in minutes, in the microwave. The word polenta can also refer to the ground cornmeal. In this recipe polenta refers to the ground cornmeal, which is mixed with boiling water and left to cool then self-raising flour, eggs and butter is added to form a smooth batter. The resulting batter is set aside for 2 hours, and then fried as pancakes. We enjoyed eating these polenta pancakes for breakfast and hope you’ll love them too. Have a fantastic week!
- Ingredients
- 90g (¾ cup, 30z) all-purpose (plain) flour
- 2 teaspoons baking powder
- 2 tablespoons castor sugar
- ¼ teaspoon salt or to taste
- 75g (½ cup, 2½oz) finely ground polenta
- 125ml (½ cup), 4 floz) boiling water
- 3 eggs beaten
- 50g butter melted
- Strawberries hulled and halved
- Maple syrup, honey or whipped cream to serve
Please always remember to assemble all ingredients before you start
Sift the flour, baking powder, sugar and salt and set aside.
Mix polenta with boiling water in a large mixing bowl. Stir until smooth. Leave to cool slightly.
and mix until smooth and free of lumps.
Stir in butter and mix until blended. Cover and set aside for 2 hours.
Heat a non-stick skillet (frying pan) and brush lightly with oil. Stir the batter and add ¼ cupful into the pan spreading with the back of a spoon. Cook until bubbles appear in the surface
then flip over and cook the other side. Transfer to a plate lined with paper towel (sponge towel) and keep warm while cooking the remaining batter.
Arrange pancakes in a stack, decorate with strawberries and drizzle with maple syrup, or honey or any other preferred syrup. Serve.

Beautiful pancakes my friend. I do have a pancake story.
In the ’80s I stayed with Jim & Doris Nelson in Julian CA (I’ve lost touch and can’t find them). Jim asked me to take his truck down to Ramona for servicing. I popped into a nearby cafe for a cooked breakfast while I was waiting for the truck to be finished. I ordered the usual, inc. pancakes. I asked for three. The waitress looked shocked and went away shaking her head. “Mad English !”, I suppose she was thinking. She returned with 2 plates. One with the breakfast. The other was piled with three 1″ thick pancakes the size of “manhole covers”. I was surprised they didn’t have printed on them “San Diego Highways Dept. “. She stood over me and smiled. The cook peeped over the bar and smiled. All the customers smiled. And I thought “Oh boy !” as I asked for a 6th bottle of maple syrup. I got through one !!

Ralph I read this the other night and laughed like a mad woman. This is the funniest story I’ve heard in years. I bet all the patrons in the restaurant had a damn good laugh…and the cooks and the kitchen hands. I can visualize the cook peeping and giggling beyond redemption. I was so excited about this recipe that I hadn’t even paid much attention to who posted it – and now I see it’s Y.O.U.!! I can’t wait to try these – AND – I have a box of polenta in my cupboard!! Sad to say – I haven’t made the Polenta Pancakes yet…. but I sure plan to!! (I’m still in a bit of ‘rut’ due to family/friend illnesses BUT my aunt is now out of the hospital and one of my friend’s last test showed NO CANCER!! – so now I’m only concerned with two people, one of whom started chemo last Tues. In any event, my flower gardens are coming along – and that makes me happy!)
Here’s my recipe for Cornmeal Pancakes – I used to make these a lot for my boys and they loved them!
Cecile’s Cornmeal Pancakes
1 cup yellow cornmeal 2 Tbs. sugar
1 tsp. salt 1 cup boiling water
Mix cornmeal, sugar and salt in a large bowl. Add boiling water and stir briefly. Cover bowl and let stand for 10 minutes.
½ cup flour 2 tsps. baking powder
Mix and set aside.
1 egg ½ cup milk
2 Tbs. butter, melted
In a small bowl, beat egg, milk and butter until smooth. Pour into cornmeal mixture along with the flour mixture. Stir quickly until just combined.
Tip!! Measure 1/2 cup milk in measuring cup, then add egg and butter. and mix. Saves on dishes!!
Heat a buttered skillet over medium heat. Using a 1/4 measuring cup for each pancake, make 4 pancakes at a time. Cook until bubbles form on the surface and the edges appear dry. Turn and cook a little longer, maybe a minute or so. (Any leftovers can be heated up briefly in the microwave – just cover with a damp paper towel.) Enjoy!
