My Favourite Salads
I can’t remember the last time I boiled an egg or had an egg salad. I use eggs a lot, for baking and making pancakes. I rarely have eggs for breakfast. I can’t remember the last time I scrambled an egg. I decided to have an egg salad last week, and we thoroughly enjoyed it. My son doesn’t eat eggs for whatever reasons. They don’t make him sick or anything. It’s just one of those things. So he carefully removed the eggs from his plate and ate the rest of the salad..
This salad is simple. You can use any green salad like romaine lettuce, or the classic iceberg lettuce or arugula (rocket) or even baby spinach. I used ranch dressing. It’s one of the bottled dressings I always buy. If you have a better alternative that pleases your palate, please feel free to use it. Our summer is very mild and exciting. Lots of fresh air, cool breezes, soft sunshine, and rain. I hope your week has started well. I wish you a fantastic one.
- Ingredients
- 3 eggs
- 4 medium potatoes (3 cups when diced)
- 3 cups (750ml) lettuce, thinly sliced
- 1½ cups cherry tomatoes halved
- 1 small red bell pepper julienned
- 5 slices bacon cooked till brown and crumbled
- ¼ cup fresh parsley chopped
- 1 cup (250ml) diced, mature cheddar
- ½ cup ranch dressing
Please always remember to assemble all ingredients before you start. Boil eggs to your desired doneness, cool in cold water, shell and quarter. Place potatoes in cold salted water and boil until fork tender. Drain under cold water, and dice after cooled. (I reduced quantities)
In a large bowl mix together all salad ingredients, top with the eggs and drizzle over ranch dressing.

This looks great! I love putting hard boiled eggs into a salad, such an easy and inexpensive source of protein. My middle son recently discovered that he loves hard boiled eggs, unfortunately he is messy when he ears them!
My son doesn’t eat eggs for no reason. He usually picks them and puts them aside. They don’t really make him sick or anything. I used to be messy with eggs to when I was young ,too. The yolk would be all over the place. Thanks for visiting and best wishes!

Funny thing…I had boiled 6 eggs yesterday morning, checked email and there you were with my supper. I have to say it was very delicious and refreshing in our heat! I loved all the vegetables with the hard boiled egg and potato! I’ve never thought to do it this way! Thanks Liz for all of your creative recipes. Sorry for the delay. I’m spending Sunday afternoon clearing the backlog of messages. Times are so busy. If only there were 30 hours in a 24 hour day. That would be awesome and tiring too! LOL. This looks really good. What’s the reason for using cubed cheese as opposed to shredded?
Because cheese is a main part of the salad, unlike grated one which is added as a garnish at the top. It tastes very nice.

Hmm, I’ve always had cheese (cheddar or feta mostly) shredded and mixed into a salad. Cubed cheese in a salad in new to me. I’ll have to try it.
