My Favourite Desserts
It’s a very lovely day today.There’s absolutely nothing to complain about even if I wanted to. I made this apple slice a few weeks ago. You might know by now that I cook faster than I post. People eat every single day and sometimes I cook two recipes in a day, but usually only manage to post one daily. Anyway this apple slice was delicious. I love honey so I warmed some and drizzled over the slice and ate without uttering a word. I started talking after my plate was empty.
It’s best to use green apples like granny smith or other cooking apples. I don’t know why apple always goes with cinnamon . What if I added cloves or cumin or something like fennel seeds? How would it taste and why don’t we ever venture into the myriad of spices we have in our pantries? Next time I shall make a chilli slice with apples and sprinkle liberally with fennel or caraway seeds. My friends in Italy have a long weekend. I envy all of you. We are now preparing for school and doing last minute homework. I wonder what you guys do when you have a holiday in Italy. Please share with us.

- Ingredients
- 250g all-purpose (plain) flour (9oz, 2 cups)
- 2 teaspoons baking powder
- 150g (5½oz) butter
- 120g (½ cup, 2½oz) caster sugar
- 2 large eggs
- 300ml (1¼ cups) sour cream
- 2-3 green apples, peeled, cored and thinly sliced
- 60g (½ cup) finely chopped nuts (walnuts or pecans)
- 2 tablespoons caster sugar
- 1 teaspoon ground cinnamon
Please always remember to assemble all ingredients before you start. Sift the flour and baking powder and set aside.
Beat the butter and sugar until light and creamy. Add eggs one at a time, beating well after each addition.
Using a metal spoon, fold half the flour
alternately with half the sour cream. Repeat with remaining flour and sour cream.
Spoon the mixture into the prepared tin (pan).
Arrange apple slices over the top
and sprinkle with combined pecans,
Bake 45-50 minutes or until a skewer inserted in the centre comes out clean. Allow to cool in the tin (pan) and then remove and cut into squares.
I drizzled my slice with some honey…it tasted delicious!
Apple and Cinnamon Slice
Preparation time: 20minutes; Baking time: 45-50 minutes; Serves: 12-16 slices, depending on size; original recipe from Family Circle Scones, Muffins and Teatime Treats
Ingredients
- 250g all-purpose (plain) flour (9oz, 2 cups)

- 2 large eggs
- 300ml (1¼ cups) sour cream
- 2-3 green apples, peeled, cored and thinly sliced
- 60g (½ cup) finely chopped nuts (walnuts or pecans)
- 2 tablespoons caster sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 360°F (180°C). Oil and line the base and sides of a 20 x 30 cm shallow baking pan with parchment (greaseproof paper), extending ½ inch over the sides. Sift the flour and baking powder ans set aside.
- Beat the butter and sugar until light and creamy. Add eggs one at a time, beating well after each addition. Using a metal spoon, fold half the flour alternately with half the sour cream. Repeat with remaining flour and sour cream. Spoon the mixture into the prepared tin (pan).
- Arrange apple slices over the top and sprinkle with combined pecans, sugar and cinnamon. Bake 45-50 minutes or until a skewer inserted in the centre comes out clean. Allow to cool in the tin (pan) and then remove and cut into squares. Serve for dessert.
Points to Note:
- Please note that oven temperatures are given as a guideline only. You may need to add or reduce the suggested temperature depending on your oven. I baked the slice at 350°F (180°C) for 55 minutes.
- I always weigh ingredients, especially the flour and butter. You can use cup measures, but please note if you scoop flour directly from the bag you will end up with 150-185 g of flour instead of the recommended 125g. I suggest you spoon the flour into the cup, heaping it up over the top, then slide a knife across the top to level off the extra. Be careful not to shake or tap the cup to settle down the flour or you will have more than you need. You can also sift the flour first then scoop. Best advice: use a weighing scale, you’ll get the best results.
