My Favourite Rice Recipes
Turmeric (Curcuma longa) is a plant of the Ginger family, whose rhizomes are either used fresh (like ginger) or boiled for 30-45 minutes, dried in hot ovens and then ground into a deep yellow powder used in cooking. It’s mainly used in savoury dishes like rice or curries, but occasionally used in sweet dishes, especially in India and also used to impart colour to food. The taste or turmeric can be described as slightly bitter, slightly hot with a mustardy smell. It’s believed to have the potential of treating a number of diseases including: cancer, diabetes and allergies, just to mention a few. I love using turmeric because it imparts a nice colour to rice but it also enhances the flavour that would otherwise be bland. This recipe is very simple but the rice tastes very nice. I hope you’ll like it!

- Ingredients
- 2 cups basmati rice, washed and drained
- 3 tablespoons olive oil
- 1 large onion moon sliced
- ½-1 teaspoon dried chilli flakes or freshly ground black pepper
- 2-3 cloves garlic
- 1 teaspoon cumin seeds, toasted and crushed
- ½ teaspoon turmeric
- 1 x 400ml can good quality coconut milk
- 375ml (1½ cups) stock
- ¼ cup cilantro, finely chopped
- Salt to taste
Please always remember to assemble all ingredients before you start (Oops, I did not include stock here)
Heat oil in a heavy based non-stick pan and cook onions 5 minutes until soft and golden. Add chilli flakes and garlic cook one minute.
Increase the heat, add the rice and cook 4 minutes until well coated with oil, then add cumin and turmeric
and stir until rice is yellow. Add stock and coconut milk. Season if necessary. and bring to a rolling boil, reduce heat and simmer for 12 minutes without lifting the lid. Turn off the heat and let stand for 10 minutes, without lifting the lid.
Lift the lid, add the finely chopped cilantro and fluff the rice.
Coconut Rice with Turmeric
Preparation time: 20 minutes; Cooking Time: 30 minutes; Serves: 4-6

I actually have a jar of unopened turmeric in my spice cabinet right now. My husband loves yellow rice and I have been meaningto try to make it from scratch. Your pictures make me feel brave enough to try it.

I know you’re away but thought I’d let you know I made this tonight and it was delicious! I did notice that garlic and turmeric were both missing from the recipe – you must have been in a rush Lol! I added ginger too. Really good, thx 🙂

We also like turmeric in fried rice. It really makes the rice extra special. The cilantro adds an interesting taste as well. Looks like this goes well with grilled meats. Definitely a keeper! 🙂
