My Favourite Salads
I made this simple salad for lunch the other day and I really enjoyed eating it so I decided to take some photos and post the recipe. I used fresh mozzarella cheese. Fresh mozzarella is a semi-soft cheese, with high moisture content, usually stored in brine but can also be sold in vacuum-sealed packages. You can also use Bocconcini (fresh mozzarella cheeses, about the size of an egg.) They are packaged in whey or water, have a spongy texture which is great for absorbing flavours. The name of the cheese, actually means “small mouthfuls” in Italian. I hope you love simple salads with fresh cheese and tomato, and enhanced with basil.

- Ingredients
- 500g penne
- 20 cherry tomatoes, sliced once lengthwise
- 250g fresh mozzarella cheese drained and diced
- 10 fresh basil leaves, finely shredded basil
- 2-3 clove garlic, chopped
- 3-4 tablespoons, olive oil
- 1 tablespoon dry white wine
- Kosher salt and freshly ground black pepper
- ½ teaspoon chilli flakes (optional)
Please always remember to assemble ingredients before you start. Oops I forgot the olive oil…
Combine cherry tomatoes mozzarella, basil, garlic, olive oil and white wine and set aside for flavours to meld.
Add mixture to pasta toss to mix. Serve
Penne with Tomatoes and Mozzarella
Preparation: 30 minutes; Serves: 6
Ingredients

Instructions
- Boil pasta as per packet instructions until al dente and drain thoroughly.
- Combine cherry tomatoes mozzarella, basil, garlic, olive oil and white wine and set aside for flavours to meld.
- Add mixture above to pasta toss to mix. Serve

Hey Liz, I also love this classical combo of fine ingredients but prefer the more softer taster Buffalo mozzarella,….Yum Yummm. 😉

Just got them all staked up this morning! They took a beating from a heavy rain this week. Can’t wait for all the tomatoes to eat, not the work it will take to pick them and preserve them though.
