If you are wondering what earth day is, here is a definition from Dear wiki “Earth Day is an annual event, celebrated on April 22, on which events are held worldwide to demonstrate support for environmental protection. It was first celebrated in 1970, and is now coordinated globally by the Earth Day Network and celebrated in more than 192 countries each year” The world is estimated to have about 196 countries, and 192 are members of the UN.

Did you know that over half of the world’s population lives in cities? How green is your city? A green city is made up of buildings that are energy efficient, conserve water and reduce waste. In short, a green city is made up of green buildings (green construction or sustainable buildings). It’s estimated that buildings are responsible for 1/3 of global greenhouse gas emissions. Besides green buildings, there should be a focus on making cities more walkable and bikeable—with protected bike lanes, plenty of public green space, and pedestrian-friendly sidewalks.   • 4 slices streaky bacon
  • 400g broccoli florets (4 cups packed)
  • 1 teaspoon olive oil
  • 5 small onions quartered
  • ½ teaspoon salt
  • 1 teaspoon brown sugar
  • Grated parmesan to garnish

Add bacon and cook until browned, set aside. Add onions, salt and sugar to 1 tablespoon of the rendered fat and cook till onions are caramelized. Meanwhile steam, blanch or microwave broccoli to your desired crunchiness and drain.

    1. I am trying to run away from garlic bread, that’s why am eating broccoli (LOL). In principle garlic bread is the best in practice, i have to stay away…. are you not sleeping.   2. Looks super yummy! Two of my favorite foods together. I have had something similar and enjoy using the leftovers, if I have any, in eggs for an omelet the next morning. Is my city green, good question! We are very small but do all right. I do my part by driving a hybrid station wagon, just got my all time best of 52.5 mpg at 509 miles on the tank. We are also putting up rain collection barrels on the new garage to water the garden.

      Hey I should plan to buy a hybrid station wagon. are you kidding me? you get 52 mpg? that sounds great. It’s great to know you are harvesting rain to water the garden.       1. Funny too, the car is advertised to get 40mpg highway/44mpg city. I get a combined around 48-50, Depending on time of year. When you have all the gauges showing how much fuel you consume it is easier to adjust to save even more. I love my hybrid and wouldn’t change back to a regular car…well maybe a little sporty thing someday!

  3. I must say, I didn’t do much for Earth Day this year – it kind of snuck up on me! But I am hoping Ottawa will become more bikeable and walkable. My neighbourhood is actually pretty great – there are tons of parks and green space around for me to go running and my daughter to play at. But there’s always places to improve! I definitely want to try bacon with my broccoli this weekend. Looks amazing!

    1. I was on ottawa last year and I saw a lot of people biking in most neighbourhoods and especially at the Rideau canal. Ottawa is a beautiful city but it gets cold over winter..We have lots of green space too but we need to improve on the biking aspect. Thanks and have a wonderful week!

  4. Doesn’t this look yummy? I am going to share it with a friend who I know loves broccoli. I have learned how to make broccoli ‘chips’ now too so I’m quickly becoming a convert. For some reason I usually choose cauliflower over broccoli, unless I need the colour on a plate!!! This looks so simple, I have never thought to combine it with bacon. Once again Liz, thanks for being such a great recipe hound for us all!

      I am eating more veggies this year, so I need to keep the kids interested. How does one make broccoli chips? is it fried? I love both.   6. Broccoli is a big favorite, but I usually just steam it, butter it up, and squirt on a bit of lemon juice. But, bacon would certainly make it much more attractive! ;->

      I used to be like you, just steaming broccoli day in and out but now I eat it more and I want to give it a different taste every time. I loved this one and more are yet to come!

      1. We love it with just butter and lemon. I tend to put other ingredients into some sort of sauce or gravy to enhance a meal. My two-quart steamer gets hauled out for nearly every dinner for some task.

        1. I made some curried broccoli. It tasted really great. I eat a lot of it. trying to reduce carbs…but gravy is nice too because you can pour some over the broccoli as well. Have a nice day!

        2. I don’t recall that it was particularly expensive. I don’t use it much except for mixing it with flour for pudding occasionally. I bought a five-pound bag in early 2008 when Gary was eating a lot of pudding after his transplant. It took a while for his digestive tract to recover from the trauma, so potato soup and chocolate pudding were frequently on the menu. I have kept it in the freezer all these years.

          The amount of thickener for a sauce or gravy shouldn’t be an issue as far as carbs go, unless there is some medical reason for eliminating them entirely.

          Can you mail order from the US?

        3. It’s probably in the Bulk Barn Store here, I believe. I’ve just never bothered to really look for it. I use cornstarch because it’s more easily available and I don’t do much thickening. I don’t make a lot to gravy..LOL. I tend to make stews more. Thanks for the concern. You truly are a great companion and friend to Gary. I hope his health is much better now.
