Spicely Delicious
A little while ago I bought several tubs of unsweetened apple sauce hoping I would use them in baking as a substitute for oil, eggs or sugar. I did use a few tubs for making the Pineapple Banana Loaf and I really loved the end result but after that, I don’t know what happened. Apple sauce used to be very popular during winter but now it’s used all year round for several foods: as a condiment for roast pork; to accompany pancakes; as a sweet dip for vegetables or fries; as a relish for hamburgers; or mixed with smoothies or yoghurt and for baking many different goodies like: muffins, cakes, cookies or even pies.
I am in the process of trying to clear the tubs of applesauce that I’ve been buying and stocking. If you have a nice recipe that requires apple sauce please swing it my way. I found this site with many suggestions on how to use up apple sauce like: incorporate into a curry as part of the liquid (is a curry supposed to be sweet or savoury?); incorporate into batter of pancakes and waffles, and forget about maple syrup or honey, or make a butternut squash and apple sauce soup (interesting) and then I came across the ultimate suggestion that said: “apple sauce freezes indefinitely”, is this true? Today I want to share with you applesauce chocolate chip muffins. They tasted extremely nice. I hope you’ll enjoy them too!

- Ingredients
- 250g (9oz, 2cups) all-purpose (plain) flour
- 1 teaspoon baking soda (bicarbonate of soda)
- 1½ teaspoons cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- 100g salted butter
- 400g (400ml, 4 little tubs, 1⅔ cup) unsweetened apple sauce
- 2 tablespoons molasses
- 100g chocolate chips
Please always remember to assemble all ingredients before you start
Preheat the oven to (400°F) 200°C. Grease or spray muffin pan with oil. Sift the flour, baking soda, cinnamon, nutmeg and salt. Set aside.
Cream butter and sugar with an electric mixer until light and fluffy.
Beat in apple sauce in two batches, adding the molasses with the second batch.
The mixture will look curdled after adding apples and molasses but don’t worry
Add the flour in two batches and beat on medium speed until just combined.
Fold in half the chocolate chips.
The final batter looks like this
Spoon the batter evenly into prepared muffin pan (tin) and bake for 20-25 minutes until a toothpick inserted in the centre of the muffin comes out clean. This mixture makes 14 muffins, put the extra two in paper cases put in ramekin dishes
Remove the muffins from the oven and let sit in the tin for about 5 minutes
Using table knife or spatula carefully dislodge muffins and transfer to a cooling rack
I loved the spicy taste of these muffins
I savoured mine slowly for three days
If you like you can sprinkle some icing (confectioners) sugar on top of the muffins

Points to Note:
- Please check if muffins are ready by inserting toothpick in the centre. It should come out clean when muffins are ready.
- Please note that oven temperatures are given as a guideline only. You may need to add or reduce the suggested temperature depending on your oven. I baked the muffins at 400°F (200°C) for 25 minutes.
I love the way the chocolate chips are sticking out on the top of the muffins! 🙂

I only discovered the secret of apple sauce a couple of years ago. So I am still experimenting. But the best thing I discoverd is that you do not need to buy apple sauce: you just freeze apple slices

Oh know you can always add apple sauce in place of oil or butter in a recipe. It works very well especially if you use it to reduce the amount of oil. Next time don’t throw…have a lovely day!

Applesauce is such a wonder ingredient when it can help reduce the fat in recipes and or be used as a substitute for eggs for people who can’t eat them. Your recipes sure keep us interested Liz. Here’s something you may find interesting. While we were in Hawaii, my cousin would make us an omelette using egg whites only. I sort of turned my nose up at it, but then decided to try a bit. It was refreshingly good! Less cholesterol or whatever. I usually only eat eggs on the weekend, and I really enjoy over easy or poached. Still. If I was concerned about the yolks, I wouldn’t hesitate to try the whites only!
Look at me, I’ve just realized these muffins have no eggs (LOL). Where did you take all the yolks? I eat eggs maybe once a month or even once every two months. I’m not crazy about them and i don’t like frying them. When my older daughter is here I eat eggs more often because she is forever frying eggs in the morning. Well, darn. I thought that I had some applesauce in the cupboard.. I was getting so excited, because I was all ready to give this recipe a try.. and then.. nope. But that’s ok! These look really yummy. I tend to use pumpkin, sweet potatoes or yogurt more in baking to replace fat. I also have plenty of homemade pear sauce to use up too. This looks good, especially the flavor combinations, besides, chocolate chip muffins, what is not to like?! Those little tubs of applesauce do freeze well. I freeze them and then pack it in a school or camp lunch, built in cooler pack. It thaws by lunch time and keeps everything cold.

Made these right away this A.M Unfortunately, didn’t have enough applesauce so added 1 egg, a little water and about 1/4 c. currant jelly. Didn’t use chocolate chips. They turned out very good!!!
