Today I had a really lazy and uneventful day. I don’t know about you. Please share with me some interesting events of your weekend. I love listening.

For lunch I had a very hearty soup, made from all the left over veggies in the fridge. It was a very interesting soup with mushrooms, potatoes, carrots, green peas, elbow pasta and some chorizo. If you have been following this blog, then you know that I always find an excuse to add something meaty. I’m a carnivore…sorry if you are a vegetarian and you are reading this, but the good part is I always accompany all my meat dishes with piles of vegetables, so I should correctly call myself herbivore  Omnivore but I love the sound of carnivore, so carnivore it shall be. My lunchtime soup was made with homemade stock, with some fresh herbs, spices, and chicken carcass. It tasted really good.

I also spent some time browsing the internet, aimlessly. Do you ever find yourself just browsing, the internet, aimlessly, sometimes? Anyway, during my aimless browsing, I found some really interesting titles, that entertained, and even educated me. If one of these titles is yours, please don’t be offended. I’m reproducing them because I found them entertaining and enlightening, so here we go:

  • “Chunky no blender smoothie”, I always thought smoothies were meant to be smooth like the name rightfully suggests, so if a ‘smoothie’ is chunky, should we still call it a smoothie or a chunkie?? What’s your take on this one?
  • “Clean eating”, I just wondered whether there is ‘clean’ and ‘not clean’ eating???
  • “In times of trouble, here are some snacks”,  wow, now we even have some snacks that can alleviate trouble. I’m sorry, I forgot to get ‘the list of the snacks’, it was more of a pictorial presentation.
  • Bananas + Smoothies = Good Morning”:  so ladies and gents, if you want to have a good morning make sure you have bananas + smoothies, it’s a proven formula?
  • “Tired of smoothies, then  try groovy smoothies”, oh yes, we now have some really groovy smoothies, so If you are still taking ‘just smoothies’, you might think of styling up a little and start taking some groovy ones! As I mentioned before if one of these is your title, please do not get offended, I like having fun.

Today I want to share with you a recipe for apple cake. It’s not just another apple cake. This apple cake is one of the most delicious cakes I have eaten in 2013. it’s very special. If you love trying out recipes like me, please give this one a try. I promise you, you will not regret it.

  • 225g (2 cups minus 2 tablespoons, 8oz) all-purpose flour
  • 1¼ teaspoon baking powder
  • 185g (¾ cup, 6½oz) butter
  • 2 teaspoons grated lemon or lime zest (rind)
  • 160g (¾ cup, 5½oz ) castor sugar
  • 3 eggs
  • 120ml (½ cup, 4floz) milk
  • 1½ medium apples
  • 1 teaspoon gelatine (vegetarians, please omit this)
  • 2 tablespoons water
  • 2 tablespoons strained (sieved) apricot jam

Please, always remember to assemble all the ingredients before you start baking.

Sift the all-purpose and self-raising flour into a bowl.

Grease the 8½” (21.6 cm) pan, and line the base with parchment (greaseproof) paper.

Combine the butter, sugar and lemon or lime zest (rind) in a bowl.

Apple Cake with Apricot Jam Glazing_7610Beat the butter, lemon zest (rind) and sugar with an electric mixer, until light and fluffy.

Beat in eggs one at a time, beat until combined, before adding the next one.

This is what the mixture should look like after adding the third egg.

Fold in the sifted flours and the milk.

Peel apples and, cut into quarters, remove cores.

Make lengthways cuts into the rounded sides of apple quarters, cutting about three quarters of the way through. (I used 6 quarters)

Arrange quarters rounded side up, around the edge of the cake. I used a granny smith and golden delicious. Bake at 360°F (180°C) for about 1 hour.

Sprinkle the gelatine over water, leave to stand until  it expands, dissolve over hot water or  microwave for 20 seconds,

Add the Apricot  jam and stir thoroughly to mix.

Remove cake from the oven. This is how mine looked like.

Spread half the jam mixture over hot cake. Cool cake in pan.

Remove cake from pan, once cooled and  brush with remaining warmed jam mixture

Serve with whipped cream. I  served it with some slices of  fresh, chilled, apples, it was really delicious.

We really enjoyed this cake. I would make it over and over and over again.

Preparation time: 20 minutes, Baking time: 1 hour; Makes: 8½” (21.6 cm) round cake

Recipe slightly adapted from Australian Women’s Weekly

Ingredients

  • 225g (2 cups minus 2 tablespoons, 8oz) all-purpose flour
  • 1¼ teaspoon baking powder
  • 185g (¾ cup, 6½oz) butter
  • 2 teaspoons grated lemon or lime zest (rind)
  • 160g (¾ cup, 5½oz ) castor sugar
  • 3 eggs
  • 120ml (½ cup, 4floz) milk
  • 1½ medium apples
  • 1 teaspoon gelatine (vegetarians, please omit this)
  • 2 tablespoons water
  • 2 tablespoons strained (sieved) apricot jam

Instructions

  1. Preheat the oven to 360°F (180°C) ten minutes before use.  Grease and line the base of an 8½” (21.6 cm) round springform pan. Sift the flour and baking powder and set aside.
  2. Cream butter, (zest) rind and sugar with an electric mixer until light and fluffy.
  3. Beat in eggs one at a time. Beat until combined. Stir in sifted flours and milk. Spread into prepared pan.
  4. Peel apples and, cut into quarters, remove cores. Make lengthways cuts into the rounded sides of apple quarters, cutting about three quarters of the way through. (I used 6 quarters)
  5. Arrange quarters rounded side up, around the edge of the cake. Bake for about 1 hour or until a skewer inserted in the middle, come out clean.
  6. Sprinkle the gelatine over water, leave to stand until until it expands, dissolve over hot water or just microwave for 20 seconds, add jam and stir thoroughly to mix. Spread half the jam mixture over hot cake. Cool cake in pan. Remove from pan, brush with remaining warmed jam mixture.
  7. For cup measures: spoon the flour into the cup, heaping it up over the top, then slide a knife across the top to level off the extra. Be careful not to shake or tap the cup to settle down the flour or you will have more than you need. I use a 240ml American cup.

Points to Note:

  • Please note that oven temperatures are given as a guideline only. You may need to add or reduce the suggested temperature depending on your oven. I baked the cake at 360°F (180°C) for 40 minutes, then reduced to 350°F 175° for 20 minutes.

    1. Ha ha ha …you got me on that one, I must change the herbivore to read omnivore (I don’t like the sound though), where has all the biology gone? I tend to think in sixes because we are six. The slices were large and satisfying, I must add in bracket (for smaller portions add 8 quarters of apple) but that would spoil the beauty of the cake…it will be too congested, perhaps I should say cut each apple into six pieces, that might result in 8 people having eight slices.     1. Apricot jam happens to be my favourite. You can substitute the Apricot Jam with your favourite jam. Please remember to practice ‘clean eating’ I think it means stay away from cakes and all the sugary stuff. I’m definitely not a ‘clean eater’…and I’m not planning to be one any time soon….
