My Favourite Cakes
How was your summer holidays? Our summer was hot and humid. Frankly speaking I much prefer fall. Better weather, more energy.
I almost forgot about blogging. I am quite shocked that I haven’t posted for almost two months! Good lord. I hope this time I can really get back into blogging on a regular basis. This cake was baked sometime in July. It is awesome. Soft moist and irresistible. I wish you a great weekend.
- Ingredients
- 180g (1½ cups, 6oz) all-purpose flour
- 1½ teaspoons baking powder
- 1 tablespoon poppy seeds
- 180g (1½ sticks, ¾ cup) butter or tub margarine (I used margarine)
- 180g (2/3 cup) fine sugar
- 3 large eggs
- Grated rind (zest) of 1 lemon
- Grated rind (zest) of 1 lime
- 2 tablespoons lemon juice
Please always remember to assemble all ingredients before you start.
Beat butter and sugar until light and fluffy..Beat in eggs one at a time.Stir in lemon juice and rinds.
The final batter looks like this
Transfer batter to prepared pan
and bake for about one hour or until a toothpick inserted in the middle comes out clean. Let cool 5 minutes then transfer onto a cooling rack
We really enjoyed eating this cake.
It’s best made with margarine.

Lemon Lime and Poppy Seed Cake
Ingredients
- 180g (1½ cups, 6oz) all-purpose flour

- 180g (2/3 cup) fine sugar
- 3 large eggs
- Grated rind (zest) of 1 lemon
- Grated rind (zest) of 1 lime
- 2 tablespoons lemon juice
Topping
- 2 tablespoons lime juice
- 90g (¾ cup) icing (confectioners) sugar, sifted
- 2 teaspoons poppy seeds
Instructions
- Grease a 9 x 5-inch (23 x 13cm) tin (pan) and line the base with parchment. Preheat the oven to 325ºF (160ºC) ten minutes before baking.
- Sift flour and baking powder. Stir in poppy seeds and set aside.
- Beat butter and sugar until light and fluffy.
- Beat in eggs one at a time.
- Stir in lemon juice and rinds.
- Fold in in the flour. Transfer batter to prepared pan and bake one hour to until a toothpick inserted in the middle comes out clean. Let cool 5 minutes then transfer onto a cooling rack
- For the Topping: mix the lime juice, icing sugar, and poppy seeds to make a runny icing. Drizzle over the top of cake.
Points to Note
- Please note that oven temperatures are given as a guideline only. You may need to add or reduce the suggested temperature depending on your oven
- I baked the cake at 325ºF (160ºC) for 55 minutes.
- For cup measures: spoon the flour into the cup, heaping it up over the top, then slide a knife across the top to level off the extra. Be careful not to shake or tap the cup to settle down the flour or you will have more than you need.

Liz, I made this and it was delicious. I replaced the butter with coconut oil and coconut sugar instead of white sugar. It smelled really good too. I ate two slices. 🙂 Thanks again for sharing the recipe. Enjoy your weekend. 🙂

Thank you for posting this with pictures. I always have problems deciding on how thick the batter / dough should be; seeing a photo of it makes a lot more sense to me. Having the measurements in grams is very helpful as well when you are in the UK (a stick of butter is not the same size on both sides of the pond).

I love the flavors in this cake – I make a similar one but I cook it in my slow cooker and top it off with a glaze 🙂
